Ingredients
Chipotle Chicken Tenders
Chicken breast tenders
Panko breadcrumbs
Chipotle paste
Fresh Mozzarella
Cornflour
1 egg
Lime Mayo
5 tbsp mayonnaise
1 garlic clove, minced
Juice of one lime
Method
- Coat chicken breasts in chipotle paste until covered
- To make the crispy chicken coating, have 3 separate bowls, one with 1 whisked egg, one with cornflour and another bowl with Panko breadcrumbs
- Coat the chicken in egg and dip into the cornflour until covered
- Re-dip into the egg and then dip into the Panko breadcrumbs until covered
- Air fry for 10-12 minutes until golden brown, crispy and cooked through
- For the lime Mayo, combine the mayonnaise, fresh lime juice and minced garlic clove into a bowl and mix
