This apple crumble ice cream sundae recipe is just what you need as the weather is warming up. Delicious homemade cinnamon and ginger ice cream with soft apple and a toffee sauce.
Ingredients
4 tbsp butter
4 Granny Smiths apples, cored and spiralized
1 tsp ground cinnamon
1/4 tsp ground ginger
1 tsp vanilla extract
2 tbsp light brown sugar
4 tbsp double cream
Ginger nut biscuits
300ml condensed milk
600ml double cream
Method
- Whisk together the double cream until it thickens and add in the condensed milk, vanilla, cinnamon and ground ginger
- Pour the ice cream into a tub and top with crushed ginger nut biscuits
- Freeze for 1-2 hours
- For the toffee cooker apples, spiralize 3-4 apples and add into a saucepan with butter and brown sugar
- Cook on a medium heat for 5-7 minutes until the apple is soft and the sauce thickens
- Remove the apple leaving the sugar and butter mixture in the saucepan
- Add in the double cream and let bubble until it thickens
- To assemble the sundaes, add crushed ginger-nut biscuits to the bottom of glasses and top with the apple
- Add a scoop of ice cream onto the top and finish with a spoonful of the toffee sauce
