These little bundles of asparagus wrapped in streaky bacon are a delicious appetiser or side dish. Topped with parmesan, fresh lemon zest and balsamic vinegar, they are full of flavour.

Ingredients
Bunch of asparagus, 20 spears
Streaky bacon, 10 rashers
Olive oil
Parmesan
Lemon
Balsamic vinegar
Salt and cracked black pepper
Method
- Preheat the oven to gas mark 6 / 200 degrees
- Place the asparagus onto a baking tray, drizzle with olive oil and season with salt and pepper
- Gently toss the asparagus until they are coated evenly
- Divide the asparagus into 10 bunches, so there are two spears per bundle
- Wrap a slice of streaky bacon around each asparagus bundle and place back onto the baking tray
- Drizzle with a squeeze of lemon juice and season with salt and pepper (you can add slices of lemon on top for extra flavour)
- Cook in the oven for 30 minutes, turning each bundle half way through
- Remove from the oven and finish with grated parmesan, lemon zest and a drizzle of balsamic vinegar
- Enjoy as an appetiser or a side dish
