Avocado, Halloumi & Streaky Bacon on Sourdough Toast with Honey

The perfect brunch. Avocado, halloumi & streaky bacon on sourdough toast with a jammy poached egg topped with honey and chilli flakes.


Ingredients

Avocado

Halloumi

Streaky bacon rashers

Sourdough bread

Eggs

Honey

Chilli flakes


Method


- Place a skillet onto a medium heat and a add knob of butter

- Once melted, fry a slice of the sourdough bread both sides until crispy and golden brown

- On a cast iron grill, fry the streaky bacon and the halloumi until crispy

- Slice the avocado and season well with salt and cracked black pepper

- For the poached egg, bring a saucepan of water to the boil and then turn the heat off the hob

- Crack the egg into a ramekin and slowly drop the egg into the water

- Remove after 4 minutes with a slotted spoon

- Place the halloumi, streaky bacon, avocado onto the sourdough and top with the poached egg

- Finish with seasoning, chilli flakes and a drizzle of honey
