This baked pasta dish is a hearty and delicious meal to enjoy. Using pork mince, white wine, tomatoes, fresh herbs, and conchiglie pasta, finished off with fresh mascarpone and baked.
Serves 4
Ingredients
500g pork mince
1 brown onion, minced
2 tbsp fennel seeds
90ml white wine
2 tins of chopped tomatoes
2 tbsp tomato puree
2 garlic cloves, minced
150g Conchiglie pasta
2 tbsp mixed herbs
Fresh basil
100g mascarpone
75g cheddar
1 bay leaf
Method
In a large skillet on a medium heat, add the pork mince, cook until brown and set aside
In the same skillet, add in the chopped onions, garlic and fennel seeds and cook for 1 minute
Pour in white wine and simmer until reduced
Add the pork mince back to the pan along with the chopped tomatoes, tomato purée, mixed herbs, bay leaf, basil,
Season with salt and pepper and simmer for 10-15 minutes
Add in the cooked pasta, top with cheddar and spoonfuls of mascarpone and bake for 10-15 minutes on gas mark 5 / 190 degrees
