These are the best roast potatoes you will ever have. Roasted in beef dripping for extra flavour, they have a golden crispy outside and a fluffy centre.
Ingredients
4 tbsp beef dripping
10-15 medium sized potatoes
2 tbsp plain flour
Sea salt
Fresh rosemary
Method
Preheat the oven to 180 degrees / gas mark 6
Peel the potatoes and cut into roughly equal pieces
Par boil the potatoes in a large saucepan of water for about 8-9 minutes until they are slightly soft
Add 2-3 tablespoons of beef dripping into a roasting tin and place in the oven whilst the potatoes boil
Drain and return the potatoes to the saucepan, put the lid on and give them a good shake to fluff up the outside
Add the potatoes to the beef dripping tin, turning to ensure they are coated in the oil
Sprinkle with sea salt, fresh rosemary and thyme and cook for 45 minutes to an hour, turning every 15 minutes
