Chicken & Prosciutto Pizza with Fresh Mozzarella, Basil Pesto & Aioli

A twist on your usual pizza - the base is cooked in olive oil and grated parmesan. Served cold, it is then topped with wild rocket, pulled chicken, prosciutto and fresh mozzarella. Dressed with basil pesto and aioli.


Serves 4


Ingredients


Pizza dough, prepared or homemade

40g parmesan, grated

6 slices of prosciutto

1-2 chicken breast, cooked and shredded

1 mozzarella ball

Handful of rocket

Lemon zest

5 tsp basil pesto

5 tsp aioli

Olive oil

Sea salt and cracked black pepper


Method


- On a baking tray, place your pizza dough on greaseproof paper

- Drizzle the pizza dough with olive oil and add your grated parmesan, lemon zest and season with sea salt and cracked black pepper

- Cook in the oven for 20 minutes on gas mark 5 / 190 degrees

- Remove from the oven and leave to cool for 5-10 minutes

- Once the pizza is cool, assemble it by adding the wild rocket, pulled chicken, prosciutto and fresh mozzarella

- Dress with basil pesto and garlic aioli and finish with a drizzle of olive oil and a grating of lemon zest

- Slice the pizza and serve
