Tender pieces of spiced chicken served with flatbreads, salad and a homemade garlic yoghurt dip. A simple yet delicious dish and lighter version of your favourite take away!
Ingredients
Chicken Skewers
4 chicken breast
5tbsp natural yoghurt
1 tsp paprika
squeeze of lemon juice
1 tsp cumin
1 tsp garlic powder
1 tbsp dried parsley
salt and cracked black pepper
Garlic Yoghurt
1 tsp garlic purée or 1 finely grated garlic clove
half a lemon juice
7 tbsp natural yoghurt
1 tsp dried parsley
salt and cracked black pepper
Additional
4 flatbreads
salad to serve, tomatoes, red onion, leafy greens
Method
- Preheat the oven to gas mark 5 / 190 degrees celsius
- In a large bowl mix the herbs and seasoning into the yoghurt and add the diced chicken (you can leave this to marinade in the fridge over night for extra flavour)
- Soak your skewers in water if they're wooden ones to prevent them from burning or use metal skewers
- Thread the chicken onto the skewers and place on a greased oven tray
- Using a basting brush, coat any remaining marinade over the chicken skewers
- Cook in the oven for 30 minutes, or until the chicken is cooked through - In the meantime, mix the yoghurt with the minced garlic, lemon juice and parsley and set aside
- Remove the skewers from the oven
- Serve with a fresh salad and warm flatbreads and top with the garlic yoghurt dip
