The classic steak side dish, this recipe consists of fresh spinach in a rich cream and parmesan sauce. Easy yet so delicious and can be made ahead of time.
Ingredients
400g fresh spinach
150ml double cream
50g parmesan
Sea salt and pepper
Grating of nutmeg (optional)
Method
Add the spinach to a large wok and cook on a medium heat until it has wilted
Set as side to cool
Once cool, add to a cheesecloth and drain out as much liquid as possible
Place onto a board and chop finely
Add the spinach back into the wok on a medium heat and stir in the double cream, parmesan and season with salt pepper and nutmeg (optional)
Cook for 3-5 minutes until bubbling and the sauce slightly thickens
