Smashed potatoes topped with mature cheddar, caramelised shallots and fresh thyme. Cooked until golden brown and crispy.
Ingredients
Miniature new potatoes
6 shallots
2 tbsp balsamic vinegar
1 tbsp brown sugar
Mature cheddar, grated
Dried thyme
Sea salt
Fresh thyme
Method
Parboil new potatoes until slightly soft
For the caramelised shallots, chop the shallots and add them to a frying pan on a medium heat
Fry for 3-5 minutes until soft
Add the balsamic vinegar and brown sugar and cook until caramelised
Add the potatoes to a baking tray and drizzle with olive oil and season with salt and black pepper
Using a glass, gently push down on the potatoes to smash them
Top each potato with caramelised shallots, mature cheddar and dried thyme
Air fry for 10 minutes on 200 degrees or cook in the oven on 200 degrees / gas mark 6 for 30 minutes
Top with fresh thyme and serve
