These smooth, creamy and garlicky mashed potatoes are the perfect side to any dish. This recipe is made with fluffy potatoes, homemade rich garlic parsley infused butter, and finished with a spoonful for extra garlic flavour!

Ingredients
2 medium baking potatoes
100ml whole milk (add this to suit your preferred consistency)
Sea salt
3 cloves of garlic, minced
handful of fresh parsley, finely chopped
50g butter
Firstly, to make the garlic butter, add the minced garlic, butter and fresh parsley into a saucepan and cook for 1-3 minutes until the butter has melted and is infused with garlic
Add into a ramekin and leave aside to set
Wash and peel the potatoes then cut them into small cubes for faster cooking
Add into a saucepan, cover with water and boil until soft, about 10 minutes
Drain the potatoes very well then place them back into the hot pot and mash dry
Add milk, half the garlic butter and season with salt and pepper and blend using a hand blender (This is optional however it created a smooth mashed potato)
Serve the mash into a bowl and place a spoonful of garlic butter into the centre and top with parsley
