Ingredients
Fennel seeds
Honey
Salt & pepper
Olive oil
Rainbow carrots
Method
- Part boil the rainbow carrots until slightly soft
- Drain the carrots and add onto a baking tray
- Drizzle with olive oil and honey and season with salt and pepper
- Using a pestle and mortar, grind down the fennel seeds and then sprinkle over the carrots
- Cook in the oven for 45 minutes on gas mark 4 / 180 degrees
