Crispy parmenter potatoes fried with pancetta and coated in honey. Serve topped with feta and fresh parsley for the perfect side.
Ingredients
2 medium baking potatoes
4 tbsp honey
1/4 tsp smoked paprika
1 tbsp mixed herbs
1 garlic clove
200g pancetta
30g feta
Olive oil
Sea salt and pepper
Method
Cut the potato into small cubes and in a large bowl coat them in olive oil, mixed herbs and paprika
Air-fry the potatoes for 15 minutes until golden and crispy
In a large skillet on a medium heat, add the pancetta and cook until crispy
Once the potatoes are cooked, add them into the skillet and coat in the pancetta juices
Drizzle over the honey and simmer for 1-2 minutes
Serve topped with crumbled feta
