A light and fluffy sponge full of lemon zest and fresh blueberries, finished with a sweet lemon drizzle.
Ingredients
250g butter
200g caster sugar
3 eggs
200g self raising flour
Zest of 3 lemons
250g fresh blueberries
Juice of 3 lemons
250g icing sugar
Method
- Preheat your oven to 180 degrees C / 160C Fan / Gas Mark 4
- Grease and line a square baking tin with baking paper
- Whisk together the eggs and caster sugar until well combined
- Melt the butter in the microwave, or in a saucepan and pour into the mixture
- Once all whisked in, add in the flour, lemon zest and blueberries and fold together
- Pour the mixture into the tin and bake in the oven for 40-45 minutes
- In the meantime, mix together the lemon juice and icing sugar until smooth
- Once baked, remove from the oven and leave to cool
- Once cooled, remove from the tin and slice into squares
- Drizzle over the lemon drizzle icing, leave to set and enjoy
