As we are coming into the colder months, this delicious pizza is a must try! The butternut squash is roasted in maple syrup and lots of herbs and then half is blended to make the pizza sauce. Topped with mozzarella, butternut and pancetta, it is full of flavour.
Ingredients
1 whole butternut squash
1 sheet of prepared pizza dough
6 tbsp maple syrup
200g pancetta
2 garlic cloves
Fresh thyme
Fresh sage leaves
1 tbsp smoked paprika
2 tbsp cream cheese or creme fraiche
1 tbsp dried mixed herbs
Olive oil
75g grated mature cheddar
75g double glouster cheese
Ball of mozzarella
Fresh basil
Method
Preheat your oven to 190 degrees / gas mark 5
Chop the butternut squash into small cubes and spread evenly on a baking tray
Drizzle with olive oil, maple syrup, fresh thyme, garlic cloves and sea salt and roast for 20-25 minutes
In the meantime, cook your pancetta in a skillet on a medium heat until crispy
Once the butternut is cooked, remove from the oven and place half into a food processor alongside the garlic cloves, a further 2 tbsp of maple syrup, sea salt, smoked paprika, mixed herbs, 3 sage leaves, 1 tsp olive oil, cream cheese and blend until smooth
Spread the blended mixture onto the prepared pizza dough and top with grated cheddar, double glouster, mozzarella, pancetta and the remaining roasted butternut squash
Cook in the oven for 15-20 minutes (on the same temperature)
Serve with fresh thyme and basil
