Rich chocolate cookies with a gooey Nutella centre.
Makes 8 cookies
Ingredients
100g butter, softened
50g light brown sugar
50g caster sugar
1 tsp vanilla essence
1 large egg
100g self raising flour
25g cocoa powder
50g white chocolate chips
50 milk chocolate chips
8 tsp of Nutella
Method
- Firstly prepare the Nutella filling by adding 1 tsp dollops of Nutella onto a lined baking tray
- Place in the freezer to harden for an hour minimum (I left mine overnight)
- Preheat the oven to gas mark 4 / 180 degrees celsius and line an oven tray with baking paper
- In a large bowl, add butter and both sugars - Beat with a wooden spoon until it is well mixed
- Then add the vanilla, egg and flour. Mix and add the chocolate chips
- Divide the mixture into 8 equal portions and gently push the frozen nutella filling into the centre of each cookie
- Cover the Nutella filling with the cookie dough shaping it into a ball
- Place them onto the oven tray making sure they are well spaced apart
- Cook for 12 minutes until slightly firm and then remove from the oven
- Leave to cool completely on the baking tray
