Ingredients
Filling
100g strawberries
3 peaches
75g brown sugar
Juice of half a lemon
1 tsp cinnamon
1/4 tsp ground ginger
Crumble
25g butter, room temperature
25g brown sugar
45g plain flour
1/4 tsp cinnamon
To Serve
Cinnamon
Fresh mint
Vanilla ice cream
Method
1) In a large bowl add the sliced strawberries, peaches, brown sugar lemon juice, cinnamon and ground ginger
2) Stir until the fruit is coated and divide into 4 petite casseroles or ramekins
3) In another bowl, add the butter, brown sugar, flour and cinnamon and rub between your fingers to create the crumble
4) Top the fruit with the crumble and bake in oven for 30 minutes on 180 degrees or gas mark
5) Serve with vanilla ice cream, fresh mint and a dusting of cinnamon
