Ingredients
Miniature new potatoes
Tomato passata
Mixed dried Italian herbs
Mature cheddar, grated
Pepperoni slices
Fresh chives
Method
Parboil new potatoes until slightly soft
Add to a baking tray and drizzle with olive oil and season with salt and black pepper
Using a glass, gently push down on the potatoes to smash them
Top each potato with tomato passata, mixed Italian herbs, mature cheddar and pepperoni
Air fry for 10 minutes on 200 degrees or cook in the oven on 200 degrees / gas mark 6 for 30 minutes
Top with fresh chives and serve
