A twist on the classic pasta bolognese, this rich and smokey sauce is full of chorizo, chipotle paste and tomatoes. Served with spaghetti and topped with grated parmesan and fresh basil.
Ingredients
Serves 4
500g beef mince
1 onion, diced
150g chopped chorizo
400g jar of passata
2 tsp chipotle paste
1 minced garlic cloves
1 tbsp dried Italian herbs
1 bay leaf
300g spaghetti
Parmesan and basil to garnish
Method
- In a large pan of boiling, salted water add the spaghetti and cook
- Add the beef mince along with the chopped onion and chorizo into a frying pan on a medium heat and cook until the liquid has evaporated and the meat is browned
- Add the tomato passata, herbs, chipotle paste and garlic, reduce the heat and simmer for 15 - 20 minutes
- Add in a spoonful of pasta water to loosen the sauce if necessary
- Once both the sauce and pasta has cooked, drain the pasta and stir into the sauce (remember to remove the bay leaf before combining)
- Serve with grated parmesan and fresh basil
