Sun-dried Tomato Pesto, Prosciutto & Burrata Crostinis

Create this delicious homemade nut-free pesto using just seven ingredients. This smokey tomato sauce is perfect topped onto fresh bread or stirred through pasta for an easy meal.


Ingredients

Crusty baguette

Prosciutto

Burrata

Fresh Chives

Red pepper flakes


Sun-dried Tomato Pesto

280g sun-dried tomatoes

60g parmesan, grated

100ml olive oil

1 garlic clove

Handful of fresh basil

1/4 tsp smoked paprika

1/4 tsp chilli flakes

Salt & pepper


Method


- To make the pesto, add all the ingredients into a food processor and whizz until smooth

- Slice the crusty baguette and top with the sun-dried tomato pesto

- Add a slice of prosciutto onto each crostini and top with burrata

- Finish with a drizzle of olive oil, red pepper flakes and fresh chives
