Sun-dried Tomato Pesto Rigatoni with Burrata & Chives

Create this delicious homemade nut-free pesto using just seven ingredients. This smoky tomato sauce is perfect stirred through pasta for an easy meal.


Serves 4


Ingredients


300g rigatoni

Burrata

Fresh Chives


Sun-dried Tomato Pesto

280g sun-dried tomatoes

60g parmesan, grated

100ml olive oil

1 garlic clove

Handful of fresh basil

1/4 tsp smoked paprika

1/4 tsp chilli flakes

Salt & pepper


Method


- Add the rigatoni into salted boiling water and cook as instructed on the packet

- In the meantime, to make the sun-dried tomato pesto, add all the ingredients into a food processor and whizz until smooth

- Once the pasta is cooked, drain the water and stir in the pesto (use as much as you want)

- Serve into pasta bowls and top with burrata and fresh chives
