A perfect way to start the day. Using a combination of truffle salt & oil it elevates the traditional scrambled egg, packing it full of flavour.
Ingredients
Serves 1
2 eggs
1 slice of sourdough bread
Knob of butter
Parmesan
Dash of single cream
Truffle salt
Truffle oil
Salami slices
Parsley to finish
Method
- Firstly fry the slice of sourdough bread in a knob of butter until brown and crispy both sides
- Beat the eggs and add into a pan alongside a knob of butter
- Add in a dash of single cream and season with pepper and truffle salt
- The trick for creamy scrambled eggs is to cook on a very low heat and gently stir, removing from the heat whilst the eggs are still a creamy consistency
- To assemble this dish, add the salami onto the sourdough alongside the truffled scrambled eggs, freshly grated parmesan and finish off with a drizzle of truffle oil and parsley
