White Chocolate Star Biscuits with Raspberry Buttercream

These star biscuits are packed full of white chocolate chunks with a buttercream centre made with fresh raspberries. Dusted with icing sugar and dried raspberries, they make the perfect sweet gift.


Ingredients


Biscuits

200g butter

200g sugar

400g plain flour

1 medium sized egg

100g chopped white chocolate


Raspberry Buttercream

fresh raspberries

200g butter

300g icing sugar

drop of pink food colouring

Freeze dried raspberries to decorate

biscuit cutters (shape of your choice)


Method


- To make the biscuits, cream together butter and sugar

- Add in the egg and stir

- Add in the flour and mix until combined

- Chop the white chocolate into chunks and add into the biscuit dough

- Using a rolling pin, roll out the biscuit dough and use the biscuit cutters to cut into shapes

- Cook in the oven for 25 minutes on gas mark 5 / 190 degrees

- For the raspberry buttercream, mix the butter and icing sugar together and add in the raspberries and pink food colouring

- Once baked remove the biscuits from the oven and leave to cool

- Add the raspberry buttercream to an icing bag and pipe onto the centre of the full star

- Add the star with a cut out onto the top so the buttercream comes through the centre

- Dust with icing sugar and the freeze dried raspberries for decoration
