Banoffee Brioche French Toast with Caramelised Bananas & Pecans

I mean what’s not to love: toffee, bananas and cream.



Serves 2 


Ingredients 


4 slices of brioche bread

2 eggs

1 tbsp vanilla extract 

2 tbsp brown sugar 

100ml double cream 

2 bananas 

Pecans and whipped cream to serve 


Toffee Sauce 

100g brown sugar 

40g butter 

60ml double cream


Method


1) Place the grill trays into Cuisinart’s 2 in 1 Grill & Sandwich maker and turn the heat up to medium

2) Add 2 eggs, brown sugar and double cream into a bowl and whisk

3) Dip each slice of brioche into the egg mixture and leave to soak for 10-15 seconds so the egg can absorb

4) Place 2 slices onto the grill and close the lid, cooking for 3-5 minutes until golden brown

5) Remove the French toast and set aside For the toffee sauce, add a saucepan onto a low-medium heat and add the cream, sugar and butter

6) Heat until all melted and bubble until it thickens 

7) Add in the sliced bananas and coat with the sauce before removing and adding to the grill 

8) Cool for 2-3 minutes until caramelised 

9) Plate up the French toast and top with the grilled bananasServe with double cream, toffee sauce and pecans
