Toasted tortillas filled with smoky pork sausages, avocado, fried egg and topped with cheese. These tacos are a delicious way to switch up your morning breakfast.
Ingredients
Mini tortilla wraps
Pork sausages
Avocado
Half a brown onion
1 tsp smoked paprika
1 tsp red pepper flakes
Pinch of sea salt
Spring onions
Feta cheese
High quality eggs
Method
Remove the sausages from their skins and add them to a frying pan on a medium heat
Using a spatula, break the sausages up into small chunks as they cook
After 5 minutes of cooking, add in the paprika, red pepper flakes and season with salt and pepper
Continue to cook until the sausages are cooked through
In another pan, lightly fry the tortilla well as so they are slightly warm
Divide the sausage between the wraps and add a fried egg, sliced avocado and top with feta and spring onions
