Ham Hock, Leek and Potato Gratin

The perfect one-pot dish, this gratin consists of leeks, ham hock and sliced potato and is cooked in a delicious wholegrain mustard and mature cheddar sauce.

Ingredients


75g mature cheddar

150g mozzarella

30g panko breadcrumbs

200g ham hock

2 leeks

1 tbsp whole grain mustard

2-3 large potatoes, sliced

1 garlic clove, minced

30g unsalted butter

45g plain flour

500ml whole milk


Method

- Preheat oven to gas mark 4, 180 degrees

- Melt butter in a cast iron skillet over a medium heat and sprinkle in flour and whisk to combine

- Cook for roughly 1 minute, whilst whisking - Slowly pour in about half of the milk whisking constantly, until smooth

- Slowly pour in the remaining milk while whisking constantly, until the mixture thickens

- Stir in the grated cheese, season with salt, pepper and mix until smooth

- Add in the wholegrain mustard, leeks and ham hock and stir

- Place the sliced potatoes evenly around the dish and slowly push down until they are covered in the sauce

- Top with panko breadcrumbs and mozzarella

- Cook for 40 minutes until the top is golden brown and crispy and the potatoes are cooked
