Healthy Chicken Satay Skewer Bowls

I have trialled this sauce numerous times until it was perfect and I can honestly say it is incredible. With just a few cupboard ingredients and the chicken skewers being air-fried, it is super easy, quick and healthy dinner or fake-away idea!!


Serves 2


Ingredients


2 chicken breasts

2 tbsp peanut butter 

1 tbsp soy sauce 

1 garlic clove 

1 tbsp honey 

200ml coconut milk

1 tsp curry powder 


Rice, cucumber, grated carrot, spring onions and crushed peanuts to serve


Method


  1. Add coconut oil and minced garlic into a saucepan on a low- medium heat and cook for 1-2 minutes

  2. Add in the soy sauce, peanut butter, honey and stir into a paste

  3. Pour in the coconut milk and curry power and stir until all combined and it thickens

  4. Thread the chicken breast onto the skewers and using a basting brush, coat the chicken with the satay sauce

  5. Air fry on 200 degrees for 16-18 minutes until cooked through

  6. Serve the chciken skewer on rice with your chosen salad and drizzle over the remaining sauce

  7. Top with spring onions, crushed peanuts and sesame seeds
