I have trialled this sauce numerous times until it was perfect and I can honestly say it is incredible. With just a few cupboard ingredients and the chicken skewers being air-fried, it is super easy, quick and healthy dinner or fake-away idea!!
Serves 2
Ingredients
2 chicken breasts
2 tbsp peanut butter
1 tbsp soy sauce
1 garlic clove
1 tbsp honey
200ml coconut milk
1 tsp curry powder
Rice, cucumber, grated carrot, spring onions and crushed peanuts to serve
Method
Add coconut oil and minced garlic into a saucepan on a low- medium heat and cook for 1-2 minutes
Add in the soy sauce, peanut butter, honey and stir into a paste
Pour in the coconut milk and curry power and stir until all combined and it thickens
Thread the chicken breast onto the skewers and using a basting brush, coat the chicken with the satay sauce
Air fry on 200 degrees for 16-18 minutes until cooked through
Serve the chciken skewer on rice with your chosen salad and drizzle over the remaining sauce
Top with spring onions, crushed peanuts and sesame seeds
