This heartwarming soup consists of parsnips, potatoes and onions. It can be paired with a variety of toppings however for this recipe it was finished with fresh cream, a drizzle of honey, basil pesto, feta cheese and sesame seeds. Serve with a warm crusty baguette.
Serves 6
Ingredients
500g parsnips
1 large onion
1 large potato
2 minced garlic cloves
2 litres vegetable stock
300ml single cream
Topping
Feta cheese
Honey
Basil pesto
White sesame seeds
Drizzle of the remaining cream
Method
- Peel and chop the vegetables and add into a saucepan with the vegetable stock
- Bring to the boil and then reduce the heat and simmer until the vegetables are cooked
- Blend the vegetables and stock until smooth, mix in the single cream and season
- Finish with a spoonful of fresh cream, a drizzle of honey, feta cheese, basil pesto and white sesame seeds
- Serve with a warm crusty baguette
