Piri Piri Chicken Traybake

Easy and simple recipe, perfect for summer dinners. All ingredients coated in a homemade peri peri seasoning and cooked on one tray, whether that is in the oven or the air fryer. Both methods below.

Serves 3

Ingredients


450g chicken tenders

2 large potatoes

1 red onion

1 green pepper

Vine of tomatoes

3 corn on the cobs

Fresh parsley, Fresh Chilli, Sour Cream and Mini Wraps to Serve

Olive Oil


Homemade Peri Peri seasoning

1 tsp Paprika

1 tsp Cumin 1/2 tsp Coriander 1/4 tsp Cayenne chilli powder 1/2 tsp Chilli flakes 1/4 tsp Nutmeg 1 tbsp Mixed herbs 1 tsp Garlic powder 1 tsp Onion powder


Method


- Slice the chicken, potatoes, pepper and onion and add into a large bowl along with a drizzle of olive oil and the peri peri seasoning

- Toss until it is all coated and marinade in the fridge for a few hours (if you don’t have time to marinade, just continue without this step)

- Place onto an oven tray OR air fryer tray and add the corn on the cob and vine tomatoes

- Cook in the oven on gas mark 4 / 180 degrees for 35-40 minutes OR air fry for 11 minutes on 180 degrees

- Serve with mini wraps, sour cream, fresh parsley and chillis
