Easy one pot dish, this creamy white wine, parmesan orzo with slow cooked honey mustard chicken is the perfect comfort food as the weather is getting cooler. The chicken pulls apart and remains juicy.
Serves 3
Ingredients
3 chicken breasts
225g orzo
2 tbsp wholegrain mustard
1 tbsp dried Sage
1 tbsp dried thyme
Sea salt
1 tbsp garlic powder
1 onion, diced
Fresh thyme
200ml white wine
350ml chicken stock
Handful of spinach
2 tbsp honey
100ml single cream
75g parmesan
Method
Coat the chicken in wholegrain mustard, dried sage, thyme, garlic powder, sea salt and olive oil
Pan fry on a medium heat for 2-3 minutes just until the chicken goes slightly brown
Add the chicken into the slow cooker along with the diced onion, fresh thyme and white wine
Cook for 4 hours on low
After 4 hours, remove the chicken and add the spinach, orzo, chicken stock and stir and and place the chicken back on top
Cook the orzo for 25 - 30 mins, check every 10 minutes or so to see if it requires anymore stock
Once the orzo is soft, add the honey, parmesan, single cream and stir
Divide the creamy orzo onto plates and top with a chicken breast, fresh thyme and parmesan
