Sun-dried Tomato & Mozzarella Baked Gnocchi

Packed full of sun-dried tomatoes and fresh basil and topped with mozzarella, this dish is the ultimate comfort food.


Serves 4


Ingredients


500g gnocchi

500g smooth tomato passata

285g sun-dried tomatoes

Fresh basil

75g grated parmesan

1 tbsp dried oregano

100ml of red wine

2 shallots, diced

2 garlic cloves, minced

100g grated mozzarella

Salt & cracked black pepper


Method

- Bring a saucepan of water to boil and cook the gnocchi as required

- Add a dash of olive oil in a frying pan on a medium heat and cook the minced garlic and diced shallots for 3-5 minutes until soft

- Add the chopped sun-dried tomatoes into the frying pan along with the red wine

- Allow the red wine to reduce and then mix in the smooth tomato passata, grated parmesan, oregano and fresh basil

- Stir in the cooked gnocchi and half the mozzarella

- Top the gnocchi with the remaining mozzarella and cook in the oven on gas mark 6 / 200 degrees celsius for 20 minutes
