Blistered Tomato and Burrata Flatbread

A delicious flatbread cooked in olive oil and parmesan. Topped with blistered honey garlic tomatoes, burrata, balsamic vinegar and fresh basil.


Ingredients


250g vine tomatoes

Fresh basil

1 tbsp honey

1 garlic clove, mince

2 flatbreads

Ball of burrata

Balsamic vinegar 30g grated parmesan


Method


- Preheat the oven to 200 degrees / gas mark 6

- Drizzle the flatbreads in olive oil, grated parmesan, sea salt and pepper and cook in the oven for 10-12 minutes until golden brown and crispy

- In the meantime, place a skillet on a medium heat and add in the vine tomatoes along with a drizzle of olive oil

- Cook for 5 minutes and then add in the minced garlic and honey

- Cook for a further 5 minutes until the vine tomatoes are blistered and soft

- Remove the flatbreads from the oven and top with the blistered tomatoes, burrata, fresh basil, sea salt and balsamic vinegar
