Light, fresh and made in minutes, this tuna pasta salad recipe is an easy summer lunch, dinner or side for a BBQ. Using colourful vegetables, it will stand out in your food spread when hosting.
Serves 4-5
Ingredients
Cherry tomatoes
Cucumber
Sweet peppers, red and yellow
Spring onions
Red onion
2 tins of tuna
375g cooked pasta (75g per person)
Lemon
Fresh dill
Fresh parsley
200g light mayonaise
1 tbsp olive oil
1 tsp dijon mustard
1 tsp balsamic vinegar
1 tsp garlic powder
Sea salt and pepper to taste
Method
1) Chop the vegetables and place into a large bowl alongside the cooked pasta and tinned tuna
2) To make the dressing combine the mayonnaise, Dijon mustard, balsamic vinegar, garlic powder and olive oil and mix until smooth
3) Add the dressing into the bowl with fresh parsley and mix until the pasta is coated
4) Top with fresh dill and spring onions and serve with lemon wedges
