Delicious pork in a garlic sauce. Finished with sesame seeds, spring onions, chilli oil and a squeeze of fresh lime juice.

Ingredients
250g pork mince
2 garlic cloves, minced
1 tsp ginger, minced
1 tsp chilli flakes
3 tbsp light soy sauce
1 tbsp rice wine vinegar
1 bunch of spring onions
1 tbsp white sesame seeds
1 tbsp brown sugar
200ml water 1 tsp cornflour
2 packets of udon noodles

Method
- Add a dash of olive oil in a frying pan on a medium-high heat and cook the pork mince for 10-15 minutes until brown and crispy
- Add two thirds of the chopped spring onions into the frying pan along with salt and black pepper
- Cook for a further few minutes until the spring onions soften
- In another frying pan add a drizzle of olive oil, the minced garlic cloves, minced ginger, chilli flakes, light soy sauce, rice wine vinegar, white sesame seeds, brown sugar and water and mix on a medium heat - Increase the heat and add the cornflour and stir until the mixture thickens
- Combine the pork mince and the garlic sauce and stir in the udon noodles and cook for 1-2 minutes
- Finish with sesame seeds, spring onions, chilli flakes and a squeeze of fresh lime juice
