Sweet Chilli Halloumi Stir Fry

An easy 10 minute recipe for a quick and delicious midweek meal. This stir fry is packed full of vegetables, fresh egg noodles, sweet chilli sauce and crispy halloumi.


Ingredients


Serves 3


Fresh egg noodles

Vegetable stir fry mix

400g Halloumi

250ml sweet chilli sauce

3 tbsp white wine vinegar

3 tbsp light soy sauce

3 tbsp sesame seeds

Dash of lime juice

Minced garlic


For the garnish I used spring onions, fresh chillis, limes and white sesame seeds but these are optional.


Method


- Cut the halloumi into slices and grill until crispy

- To prepare the sweet chilli sauce, add the sweet chilli sauce, light soy sauce, white wine vinegar, minced garlic, sesame seeds, a squeeze of lime and mix

- Fry the stir fry vegetable mix for a few minutes and add the egg noodles.

- Add in the sweet chilli sauce to the stir fry mixture until all combined

- Serve the stir fry mix with the crispy halloumi and top with spring onions, fresh chillis, sesame seeds and a squeeze of lime juice
